My parents always have fresh stuff to grab, add, or use in salad, cereal or side dishes. Pretty cool mom and dad!

Seven Days to Eat
A few years ago it was recommended to me to prepare my meals on Sunday for the week. I imagined chicken grilled and seasoned to my liking with an assortment of side dishes about two to three cups in size. Then snacks and lunch and a breakfast plan and prep on Sunday overwhelmed me.
When the week came it was eat anything for breakfast until dinner and I was a wild eater; Struggling through potato chips in the morning to ice cream for snacks and fast food burgers and sometimes french fries for a fast lunch not to mention candy from the office bowls and Judy SweetHearts homemade cookies staring at me from the other room.
I thought I was redeemed by the prepared dinner meals, which by the way was the best start of eating right I ever did in my thirty something years. Preparing chicken for five days a week moved me to other white meats like fish and egg sandwhiches with sides for my daily carbos of whatever: whole grain breads like pita, rice, and fresh loaves. And although red meats have iron and benefits, they take longer to digest like days.
That year was tough to get out of fast food value menus and desserts. Oh yes desserts. My pocket money for breakfast and lunch shorted me at least twenty a week on dollar menu items and convenient store chips and energy bars. My favorite fast food items on my work break were blue cheese smothered fries. I ate those for lunch at least three times a week.
And today as I work late I can't eat a prepared dinner of chicken and rice or noodles with marinara. I'm surrounded by fast food! So do I starve which I mostly attempt to do until I get home which is midnight or later and thats to late. They say eating past 8p is not recommended for health. And I'm still unable to fire up the stove except for Saturday mornings. But I do some nights during the week for a quick egg on toast.
Fresh veggies reach my kitchen about three times a year. I can't figure that out. I want to keep them as most of my daily carbs every day. And fresh fruits about twice a month. These too. (carb count). When I go to the market I focus on bread, millk, and eggs and that takes me a long way. Be careful coffee drinkers because I drink so much coffee that I forget to drink seven glasses of water.
